Our groves sit in the hills around Lake Trasimeno in Umbria, central Italy. The lake moderates temperatures, the soil drains well, and the altitude gives cold winters that stress the trees in a good way. People have been growing olives here for centuries.
Location & Terroir
Lake Trasimeno is Italy's fourth-largest lake. It acts as a thermal buffer for the surrounding hills, keeping frost rare and summer heat manageable. Our groves grow on gentle slopes with good drainage and sun exposure. The four varieties we cultivate (Moraiolo, Frantoio, Leccino, Dolce Agogia) are all native to this area.
Generations of Tradition
The groves have been in our family for generations. We prune each tree by hand and harvest early, before the olives are fully ripe, because that is when polyphenol levels peak. The techniques we use are mostly traditional, updated where modern understanding has shown a clear improvement.
Paciano & Lake Trasimeno: History and Tradition
Paciano is a medieval village founded in the 14th century, perched between the hills and Lake Trasimeno. This ancient fortified castle, once an outpost of Perugia against Tuscan incursions, has preserved its medieval structure intact with its three original gates and 14th-century walls. Recognized as one of 'The Most Beautiful Villages of Italy,' Paciano maintains fewer than 1,000 inhabitants and timeless authentic charm.
Lake Trasimeno, the largest lake in central Italy, has been settled since Etruscan and Roman times. The surrounding hills were first farmed by the Umbri, then the Etruscans and Romans, and olive cultivation has been continuous here for centuries. The area now holds the DOP Colli del Trasimeno designation.
