See all →From Grove to Mill
Between April and May, the olive trees flower. Small white blossoms appear across the groves. Not all of them set fruit, and weather during this period largely determines how the harvest will turn out. We monitor the trees closely and manage irrigation to give them the best chance.
Everything happens in Paciano: growing, harvesting, milling. The olives are crushed within a few hours of picking, which is how you keep the flavors sharp and the acidity low. Nothing leaves the territory until it is bottled.
